1. Mint Chocolate Chip Cupcakes

Mint and chocolate. Could this combo get any better? These mint chocolate chip ice cream cupcakes are perfect for a hot summer’s day. For this recipe, you will need –

Ingredients

• 2 cups all-purpose flour
• 1 cup granulated sugar
• ½ cup cocoa powder
• 1 tsp. baking soda
• ½ tsp. salt
• 1 cup milk
• ½ cup vegetable oil
• 1 tsp. vanilla extract
• 2 tsp. vinegar
• 3 scoops Baskin Robbins Mint Milk Chocolate ice cream (softened)
• 4 tbsp. unsalted butter (softened)

Instructions

1. Preheat the oven to 180 degrees Celsius.
2. In a large bowl, sieve and mix all the dry ingredients
3. In a medium bowl, add the vinegar to the milk and let it stand for 2 minutes. Stir in the oil.
4. Add .the liquid ingredients to the dry mixture little by little. Keep whipping with a hand whip until no lumps remain and a smooth batter is formed.
5. Ladle the batter into the cupcake moulds and bake for 18-20 minutes. Let them cool for 10 minutes.
6. In a medium bowl, whip the butter and the Baskin Robbins Mint Milk Chocolate ice cream. Transfer the mixture to a piping bag.
7. Get frosting your cupcakes with nothing but happyness! Freeze the cupcakes and serve immediately.

• 3 scoops Very Berry Strawberry ice cream (softened)
• 4 tbsp. unsalted butter (softened)

Instructions

4. Slowly add the wet ingredients to the dry ingredients. Keep whipping until a smooth batter is formed.
5. Ladle the batter into the cupcake moulds and bake for 18-20 minutes. Let them cool for 10 minutes.
6. Now combine the Baskin Robbins Very Berry Strawberry ice cream with the butter to make a lovely pink frosting.
7. Fill this mixture to a piping bag and twirl the frosting in such a manner that it forms roses. Et voila! The ice cream cupcakes are ready to eat. Freeze them until they are ready to be devoured.

• 6 scoops Baskin Robbins Coffee ice cream (softened)
• 4 tbsp. unsalted butter (softened)

Instructions

1. In a large bowl, sieve and mix all the dry ingredients
2. Preheat the oven to 180 degrees Celsius.
3. In a medium bowl, add the vinegar to the milk and let it stand for 2 minutes. Stir in the oil.
4. Add in the liquid ingredients to the dry mixture little by little. Keep whipping with a hand whip until no lumps remain and a smooth batter is formed.
5. Ladle the batter into the cupcake moulds and bake for 18-20 minutes. Let them cool for 10 minutes.
6. Use a paring knife to gently scoop out 3/4th of the centre of the cupcake.
7. Scoop ½ tbsp. of the Baskin Robbins Coffee ice cream and fill in the cupcake cavities.
8. In a medium bowl, whip the butter and the Baskin Robbins Coffee ice cream. Transfer the mixture to a piping bag.
9. Frost the cupcakes as desired. Dust with cinnamon powder on top and enjoy!
